Process

Freeze-dried raspberries from Mornington Peninsula are cold-steeped for 48 hours to remove excess water and concentrate the flavor. Chamomile provides lingering tannins for a floral finish. Murray River Salt provides salinity and leaves you wanting more. And Verjus from Semillon grapes from the Barossa Valley gives it an acidic backbone that leaves your mouth watering. Just like in the kitchen, small amounts of sugar are added at the end to balance it all out.
